ORGANIC & EXCELLENCE TEAS
Latte that change !
Each month, we present a selection of products in discovery format. This month, to coincide with the arrival of our new Hojicha powder, the team at our XIth arrondissement tea room have put together a kit of four teas ideal for preparing lattes that are a change from matcha!
The kit contains :
- 10g organic “Hojicha en poudre”: the essential roasted Japanese green tea, with delicious notes of toast and hazelnut, for an ultra gourmet latte!
- 10g organic “Earl Grey lavander”: Perfect for the London Fog recipe, this Earl Grey is enriched with bergamot and a hint of lavender for a sobritish latte.
- 10g of organic “Monsieur Speculoos”: Ultra gourmand, with its notes of spice and caramel, this black tea makes a latte that's as good as a cookie! Sprinkle with cinnamon for even more flavor!
- 10g of organic “Vanilla”: The perfect way to make a latte with hints of vanilla, which goes wonderfully well with a pastry for a perfect gourmet moment.

OUR TIPS AND RECIPES :
We recommend using oat milk, if possible “barista milk” for an even smoother foam. You can, of course, use your preferred animal or vegetable milk.
For the 3 black leaf teas:
For a 360ml mug, infuse the tea in water, dosing more than usual to obtain a fuller-bodied liquor (6g of tea for 180g of water) for 4 minutes at 90°C. Heat 180g of milk separately and add to the tea infusion. Sweeten to taste as an option. We recommend agave syrup. Then froth with an electric frother.
Cold version: first brew the tea hot, as above, but with even less water (because ice cubes will dilute the mixture). You'll need around 60g of water for 6g of tea for a 360ml mug. Let the tea cool before pouring over 3 ice cubes, then add cold milk.
For powdered Hojicha: use powdered Hojicha like matcha, whipping it directly into milk. There is 1g per 10cl at 75°C, so about 4g for a 360ml mug.
